Fancy some cheesecake?
Description: Cheesecake anyone? This is my tried and tested cheesecake recipe ^_^

I always wanted to be one of those manga asian girls who was awesome at cooking/baking. *sigh* Unfortunately that dream hasn't really come true at all. But I always thought baking cheesecakes was pretty hard, turns out its really not. So why not give it a go?
Ingredients:
- 650g full fat cream cheese (I use Philadelphia)
- 175g digetive biscuits
- 75g butter
- 175g caster sugar
- 100ml double cream
- 3 large-ish eggs
- 1 tsp vanilla extract
Method:
Preheat the oven to 150C, fan 140C, gas 2
Remove the cheese from the fridge first, after you've done the base & stuff the cheese would've softened. And don't forget to butter up your baking tin before you start!
(This is to make the crust) -
- In a plastic bag crush your 175g of digestive biscuits.
- Then melt your 75g of butter on a medium heat, make sure that it doesn't burn.
- Afterwards, in a mixing bowl combine the digestive biscuit crumbs and the melted butter so that the crumbs are evenly moistened.
- When your crumbs are done, spoon the mixture into your baking tin and even it out. Use a little pressure to pack all the crumbs to the bottom, that way when you eat the cheesecake the crust won't fall apart. Then just put it in the fridge until its the cheese is ready.
(This is to make the filling)
- Dig out your cheese into a big bowl; and beat the cream cheese with a electric mixer (if you have one) on low speed fo 1 minute, or until the cheese is smooth and free of any lumps.
- Then you add your egg yolks one at a time into the cheese, put the egg whites into another bowl because its needed later on.
- After adding the egg yolks, you add the cream and then start gradually adding the 175g of sugar in. The mixture should feel light and fluffy.
- Clean your electric beaters/ballon whisk, and start beating the egg whites, (XP you remember the egg whites?) beat it until its all white and puffy. Then, using a spoon or whatever you want, fold the egg whites into the cheese mixture and mix well ^_^
Yay! Its the last step!!
You take your crust out from the fridge, and pour your cheese mixture on top. The cheese mixture should be quite easy to scoop down. Then you can bake it for about 30 mins, or a little bit longer because it needs to have set in the center. When it comes out of the oven, just run a knife along the edge, and leave it to cool for another 30 mins. Then (sorry, still not finished yet ><) you need to loosely cover your cheesecake and let it set over night in the fridge. And finally viola! Cheesecake XD
Tips
- When you're cutting the cheesecake (this is cutting cake for posh guests), after each cut wash your knife with warm water and wiped dry for the ultimate cheesecake prettiness.
- You can dust it with icing sugar if you want or add berries maybe a lil cream and strawberries? Whatever you end up putting on it will taste yum XP
